Now I know why the cow is laughing (RL)

I've seen those Laughing Cow cheese wedges in the stores forever:

But I'm not much of a cheese person (other than on pizza/pasta), so I never gave them a second look. Then Hungry Girl mentioned them, so I gave them a try. It was only $4 or so, so why not? They sat in my fridge for a couple weeks before I got around to it. Tonight I was starving so I grabbed one.

I have the Light Mozzarella, Sun-Dried Tomato & Basil type. I've never had sun-dried tomatoes before, so I wasn't sure what to expect.

MMMMMMMMMMMMM

Mmmm to the cheese, and I assume mmmm to the sun-dried tomatoes! One wedge (which was good sized!) was only 35 calories(!!!!) and it was SO YUMMY. First I tried eating it alone (I thought it would be solid-ish, so I could nibble on it), but it was spreadable, so I put it on a couple crackers.

It would be amazing in pasta or in a sandwich. Tasted just like a slice of pizza! I boggle that it's 35 calories, it doesn't seem possible.

Anyway, highly recommended, no matter if you're watching your calories or not!

Thanks for the tip! I love Laughing Cow cheese, it was a childhood staple! I probably haven't had them in a decade...I will need to get some for snacks :D

It really IS absolutely wonderful stuff - I like them all.

I've had it mixed with fresh cooked hot chicken on whole grain bread - it added a good moisture without complicating things with mayo.

Yeah, I was thinking that it would be great with chicken. I'm going to try it on a piece of toast for lunch, mmm.

Laughing Cow cheeses are, and will always be, my go-to cheese. And believe me, I like artisenal, imported, raw-goat's-milk cheeses as often as I can, but LCs are easy to transport, low-cal and tasty.

For sure! How many times I saw people packing them into bento box lunches. If only I had realized! So much flavor and enjoyment in such a small little, easy to transport wedge.

Hmmm. That actually looks good, I must be getting better1

I'm glad you are! And Laughing Cow might be a good product for you. At the store, it sits on the shelf (not cooled!), the package says put it in the fridge when you take it home. I'm sure you could store it on a shelf until you want to eat it, then toss it in a day or two beforehand. Save your fridge space!

In related cheese, try Presidente's Wee Brie! Also delish!
