Back when I first started digging, one of my big goals was to get a red jar. I didn't need fire energy in my house, but it's rare and hard to get, so of course I wanted it. I dug and dug and dug and eventually got lucky enough to get one. I danced and put it in my house!
While there's so very little information around on digging, I once found a comment from a high level digger. He cursed getting red jars (which are ex and cannot be sold or given away) and complained about having to drop them. I gasped! But as I leveled digging further, I finally understood where he was coming from.
I have 30 of the darned things in my house right now (which means 30 safe spaces have been turned into 30 storage ones) and when I dug up two more today I actually grumbled. They're on the same rareness-level as mythril beastcoins, so when I successfully dug up something "rare" and the game had to choose between the jar and a coin which sells for 2K... I got the jar. And I grumped.
But at least they look really nice. (You can see them in the background here.) Between all the jars and all the ores/coins I dig up, I really feel like I should level smithing...
And the reminder I always tack on to crafting/digging posts: Don't try this at home. Thistle is a trained professional... Okay, that was only semi-joking. Please don't read this post and think you can run right out and dig good stuff. You'll dig up (at best) crap, and at worst you'll just screw me (and other serious diggers) over. Zones only put X items in Y times an hour (X usually being 2-4 and Y being... too few), and once the items are gone, they're gone. It doesn't matter if Joe NewDigger dug up a pebble or if Mary HighestDiggerEver dug up some rare ore, it still counts as one of the so-limited items gone. I've put a couple hundred hours and a few million gil into leveling to the (still pretty low) level I am. I didn't just hop on a bird one day and start digging up gold beastcoins. Leave digging to the professionals! ;)
Edit: Hmmm, some info for non-FFXI folks.
Your house can have a "moghancement" -- an energy which can have an effect on the game. Various items you can put in your house have different energies on them (and are listed in the description). Most of these energies have to do with crafting, and because fire crystals are used in some of the most expensive synths, having fire energy in your house is something crafters would want. (The energy makes you less likely to lose things if you fail the synth.)
Chocobo digging is just a rather boring "mini game". You buy some greens (or tons of greens) and if you're holding them while mounted on a chocobo you can use the /dig command. Chances are, even if you're the highest level digger in the game, you'll get nothing. Now and then you get stuff. The higher level you are, the better the thing you might get... but even then, you're most likely to get just total junk.
