I ate the other half of the batch this morning, and it was just as good as yesterday. So sitting made in the fridge for 24 hours extra doesn't hurt it at all. In fact, I liked the walnuts better this time, they seemed more a part of the oatmeal than something just tossed on top.

This is good news, as I can make a larger batch (using a whole banana at once) and then divide it out each day.

Sure do wish I had saved more of it yesterday. I hope I can reproduce this and make it this well again. Mmmm.

I made some last night, just with rice milk instead of almond (since, allergies), and maple syrup instead of sweetener and maple extract, and without raisins. You're right, it's so good!

Yay I'm glad you liked it too! Seems very adaptable, I bet lots of little changes would work. (Say, flavored yogurt or different fruit.)

You might want to try frozen blueberries instead of raisins. 57 calories per 100 grams instead of 299 calories. Plus blueberries are nicer than icky raisins!

(note: I am biased, as the province I was born in produces most of the frozen blueberries you see in stores, and my robotics professor made the first automated blueberry picker used in the province).

Agreed! I don't know if my banana will make it to Sunday night, so it's good to know that I can make it earlier and just store it in the fridge.

I kinda want to try Alton Brown's slow cooker oatmeal because these winter mornings are so cold! Thought I'd share it with you, we can see who makes it first ! ;-)
