A few days ago, I posted about my recipe for veggie soup with processed cheese. Quite excitedly (see, I never learn that 'Thistle can't cool' lesson) I started it in the crock pot this morning. Eight hours later, I was dishing it out for dinner.

While it smelled good, it looked... well, not unlike vomit*. Since it was dinner, I tried it. It wasn't awful, but it wasn't really good either. The cheese was pretty icky in taste, and made these "globs" in the soup. Between that and the two cans of creamed corn, it was really nasty in texture. I ate maybe five or six spoonfuls, then threw the rest of the pot out (the recipe made about ten bowls, so I was sad about this).

I think it would have been better with just the vegetable broth and potatoes, nothing else. Well, actually the carrots weren't bad either. The corn didn't work and the cheese was yucky.

Oh well, maybe next time!

* Photo taken and downloaded/resized/uploaded mostly just to test out the process on the new machine... but you can enjoy the photo of yucky-looking soup anyway!

Processed cheese is usually yucky. Next time, make your soup and then shred some cheese onto the top. Bad luck, though!

Butternut squash soup is very yummy. Quick, too. Epicurious.com is a very good recipe site. You can do generic searches for things or ask for specific ingredients (unless they've changed it again.)

If it's any consolation, most things that come out of a crock pot end up looking "not unlike vomit". (I will purloin that hilarious phrase and use it at the next available opportunity.)

I agree with [livejournal.com profile] loupnoir that adding the cheese at the end is a good idea. Sour cream, cheese and other dairy products seem to not hold up well in a lot of slow-cooker recipes. Better luck next time; you might give minestrone a try if you like that kind of soup. It stands up to a lot of variation, is easy to throw together, performs well in the crockpot, and the leftovers actually improve in flavor upon reheating.

Thanks! I collect colored pencils (to use- not to mount on the wall or anything weird like that *she says, glancing contemptuously at the spouse's wall-mounted golfball collection*) so it seemed like an a good image to appropriate. :)

Oddly enough, I bought my first set to do some illustrations for a friend's web-hosting business (funny fellow- he actually wanted the "uber low-tech" look!) and it was through that job that I discovered that colored pencils were destined to be my favorite medium and started feverishly collecting every color I could find. It's an exercise in smugness to collect something that sees regular use, takes up little storage space, and only costs $1.25 each. Better'n Elvis figurines, anyway! :)

Nope! I put it in exactly one hour before I intended to eat it, then ate it eight minutes before the hour ended (I had a timer set), so I was a good girl and left it in for the suggested 30-60 minutes!

Your soup story makes me sad. So I am giving you this soup instead. Not from a crock pot, but still so easy.

Saute one small onion, 2 teaspoons italian herbs, a diced stalk of celery with leaves, and a clove of chopped garlic (can buy in a jar) in 1 tablespoon of olive oil at the bottom of the soup pot. When the onion turns translucent, add 4 cups of vegetarian broth, one small diced potato, one 10 oz package frozen mixed vegetables, 3 tablespoons quick cook brown rice, and simmer for 10 minutes. Add 15 ounce can (rinsed) of cannellini beans, 1/3 cup very small pasta, and 2 tablespoons tomato paste. Bring to boil. Lower heat. Simmer for 10 more minutes or until pasta is al dente.

Garnish with shredded "fresh" parmesan. Makes 4 generous bowls.

(I also add an extra cup of broth, a diced zucchini, and a can of green beans.)
